A love affair with a beet root sallad

I have a love affair with beetroot salad . It’s one of those condiments that I can not resist, especially if I happen to pas a hot dog stand late at night, incredibly hungry and craving a grilled hot dog with bread … and beetroot salad .

If you´re supposed to be really ambitious, you pickle the beets yourself and whisk a good mayonnaise by hand …. but it works equally well with beets and a good mayonnaise from a jar. Especially if you are in a hurry, as we all are at Christmas.

The beet root salad you can find in a store is quite ok I think, but this year I’ve made my own version and I believe it will work just fine for both the Christmas ham and meatballs .
( Probably also to accommodate the late night hot dog ….)
Here you are!


1 large jar of whole pickled beet roots (about 18 pieces )
2 pickled cucumbers
2 winter apples
1 small red onion
1 cup of sour cream
2 cups of real mayonnaise
1 tablespoon Dijon mustard
2 tablespoons beet root juice
white pepper
grated horseradish

1. Dice the beets, pickled cucumber , peeled apple and red onion.
2. Mix sour cream, mayonnaise, Dijon mustard , beet root juice and add the vegetables .
3. Season with salt , pepper and grated horseradish. Let it rest for one night in the fridge.
